The student-operated Aspen Grille, a working classroom in partnership with the Hospitality Management Program, serves innovative, high-quality dishes while also providing students in-depth experience in both front-of-house and back-of-house restaurant operations. The restaurant sources many of its ingredients locally and is also a member of the Green Restaurant Association.
The Aspen Grille will have take-out available Monday – Friday and dine-in seating Tuesday – Friday for students and campus visitors to enjoy.
Mondays will be reserved for take-out orders only, with no dine-in seating.
A table can be reserved using opentable.com or through the Aspen Grille’s website.
The restaurant is accepting phone calls to place take-out orders as well – it can be reached at (970) 491-7006 from 10 a.m. – 1 p.m. Monday through Friday. Take-out can also be ordered online through an ordering app.

For patrons 21+, the ‘Skeller offers 20 beer taps plus additional bottled options, including select beers brewed onsite by students in the Fermentation Sciences Program (you can see them in action from the dining area on brew days!).
Established in 1968, the ‘Skeller has served as a popular gathering place for the students, faculty, staff, and visitors alike for decades. And, continues to offer a relaxing pub atmosphere complete with pool tables, TVs, and music. Late-night programs and live music are featured throughout the academic year, too!
